French Onion Soup is the ultimate comfort food. Caramelizing the onions takes patience, but the resulting deep sweet broth is worth every minute.
Ingredients (Serves 2)
- Onions: 2 large (thinly sliced)
- Butter: 20g
- Beef or vegetable broth: 400ml
- Bay leaf: 1
- Salt and black pepper: to taste
- Baguette slices: 2 (toasted)
- Gruyère or shredded mozzarella cheese: 1/2 cup
Instructions
- Caramelize: Melt butter in a heavy pot. Add onions and cook on low heat, stirring occasionally, for 30–40 minutes until deep brown and sweet.
- Simmer: Add broth and bay leaf. Simmer for 15 minutes, then season with salt and pepper.
- Assemble: Pour soup into oven-safe bowls, float toasted baguette slices on top, and cover generously with cheese.
- Broil: Broil in a hot oven or toaster until the cheese is melted and bubbly brown.
