French Onion Soup is the ultimate comfort food. Caramelizing the onions takes patience, but the resulting deep sweet broth is worth every minute.

Ingredients (Serves 2)

  • Onions: 2 large (thinly sliced)
  • Butter: 20g
  • Beef or vegetable broth: 400ml
  • Bay leaf: 1
  • Salt and black pepper: to taste
  • Baguette slices: 2 (toasted)
  • Gruyère or shredded mozzarella cheese: 1/2 cup

Instructions

  1. Caramelize: Melt butter in a heavy pot. Add onions and cook on low heat, stirring occasionally, for 30–40 minutes until deep brown and sweet.
  2. Simmer: Add broth and bay leaf. Simmer for 15 minutes, then season with salt and pepper.
  3. Assemble: Pour soup into oven-safe bowls, float toasted baguette slices on top, and cover generously with cheese.
  4. Broil: Broil in a hot oven or toaster until the cheese is melted and bubbly brown.
