The Two Main Purposes of 醒酒
1. Separating Sediment (Depost)
Aged red wines naturally form sediment (condensed 單寧 and pigments) over time. While harmless, sediment tastes bitter and grainy. Slowly pouring the 葡萄酒 into a decanter leaves this sediment behind in the bottle.
2. Aerating (Letting the 葡萄酒 “Breathe”)
Introducing oxygen to young, tightly wound wines coaxes open their locked 香氣 and softens aggressive, harsh 單寧. This chemical opening makes the 葡萄酒 taste rounder and more complex within minutes.
Which Wines Need 醒酒?
- Highly Recommended: Bold, young reds with high 單寧 (e.g., Bordeaux, Syrah) and heavily sedimented vintage red wines.
- Avoid/Skip: Most everyday whites, light reds (like delicate Pinot Noir, whose 香氣 can dissipate too quickly), and casual budget wines.
